Yes, saponification and emulsion are different.

Saponification is the conversion of basic solution, of fats and oils to produce glycerol and salts of fatty acids. 

An emulsion is a mixture of two liquids like water and liquid fat droplets that are dispersed and suspended in one another. Neither liquid will dissolve in the other.
