Some practical applications of viscocity-

Car engine oils. Need to be thick enough to protect the running surfaces, but not so thick that they can't get pumped all round the engine.

Central heating oils too - usually sprayed through a jet to burn and heat water-boiler. If they're too thick they won't blow into a fine spray and so won't burn efficiently.
