why is ammeter connected in series and voltmeter in parallel? 

A voltmeter is used to measure the potential difference across two points in a circuit. Since, in parallel connection the voltage in the branches remains same, and also the resistance of the voltmeter is very high due to which a very small current flow through the voltmeter. So, it is connected in parallel to measure the voltage. 

An ammeter is used to measure the current flowing through a component/circuit. Since, current remains same in series connection and also the resistance of an ammeter is very small due to which it doesn’t affect the current to be measured. So, an ammeter is connected in series to measure current.

Because Voltage is the difference in potential between 2 points.So if you connected a voltmeter in series all you are doing is measuring the difference in potential across a strand of wire which will be zero (or very near). To measure voltage you connect the voltmeter in parallel so that you measure the voltage from the - to the + or the voltage drop across a load.
Amperes are the measure of how much electricity is actually moving through a wire. So to properly measure you must connect in series so that the actual current flows through the meter so it can be measured. Unless of course you have a clamp on ammeter in which case that is a whole nother ball game.

A voltmeter is always connected in parallel because if it is connected in series, it will change the value of potential difference to be measured by minimising the current in the circuit as it has very large resistance and hence will give faulty reading. Connecting it in parallel will not change the value of potential difference being measured as the voltmeter will draw negligible current and hence give correct reading of potential difference.
