Yeast is used in wine making industries because it respires anaerobically and produces alcohol as a by product . And alcohol is essential for making wine .
alcohol is a byproduct of yeast. as the yeast consumes or "eats" the sugars in wine it releases carbon dioxide and alcohol. at a certain percentage of alcohol to total solution ratio, the yeast die out because the byproducts suffocate it as a human would eventually suffocate in an enclosed area. yeast are living organisms and need oxygen and "food" to live.
