The substances that impart colour to the food are called food colours. They are of two types-

- Natural: They are derived from plants, less vibrant and does not cause much change in taste of the food. e.g. violet colour from anthocyanin of beetroot.
- Synthetic(Artificial Food colour): They are formed as a result of a chemical reaction. e.g. tartrazine.
