Iron is used in the manufacture of artificial diamonds from carbon. The process requires high temperature and pressure.
Iron is  present in liquid form and dissolves carbon. Solubility of carbon in iron increases with temperature. A high amount or concentration of carbon solution in iron is required to crystallise carbon as diamond.
Enough amount of carbon cannot be dissolved in copper to crystallise it as diamond and hence copper cannot replace iron  for synthesising artificial diamonds.
