Emulsification is the process of breaking down of the large fat globules into smaller globules and making them water soluble. Emulsification of fats takes place in the gut with the help of the bile juice produced in liver.

Medically it mens that, the breakdown of large fat globules into smaller, uniformly distributed particles. It is accomplished mainly by bile acids in the small intestine. Emulsification is the first preparation of fat for chemical digestion by specific enzymes. Or the easy meaning for emulsification is, making a suspension of small globules of one liquid in a second liquid with which the first will not mix.
