Due to use of etheylene, the plant starch gets converted into sugar. I am unable to find out how it will gonna help to increase ripening of fruits.

Can you help me in understanding how the conversion of start into sugar will help the fruit or other plant part to ripe more earlier than the nearby ones?

Ethylene signal induces the synthesis of several enzymes which enhances the process of fruit ripening. Due to amylase enzyme starch in the fruit is converted into sugar which changes the floury quality of fruit into juicy content of fruit which is one of the reason for ripening of fruit.
