Uniform velocity when a body covers equal distance in equal interval of time in a specific direction is said to have uniform velocity.
For example, a car is moving in a straight line with a constant speed of 40km/h.
Variable velocity when a body covers unequal distance in equal interval of time in a specified direction is said to have non-uniform velocity.
A velocity of a body becomes variable if either its magnitude changes or its direction changes.
For example, a motion of fan is a variable velocity as it changes its direction at every point. So all the circular motions are example of variable velocity.
