How collagen yield gelatin on boiling ??

Gelatin is proteineous in nature which is derived from the most abundant protein found in animals - collagen, a natural protein which is present in the ligaments, tendons and tissues of mammals. It can be obtained through boiling the connective tissues, bones and skins of animals, usually obtained by cows and pigs. Gelatin has numerous abilities in forming strong, transparent gels and flexible films that can be easily digested, show solubility in hot water, and capable of forming a positive binding action have made it a commodity of value in processing of food, photography, pharmaceuticals, and even in production of paper.

Steps in the production of gelatin:
1) Cutting with inspection - Animal parts cut into pieces and then their quality is assured for good gelatin.
2) Degreasing and roasting - The parts are washed in high-pressure to remove all debris and soaked in hot water for the removal of fats (about 2%) and other substances. 
3) Acid-Alkaline treatment - They are soaked in line for 5 days and then subsequent washes are given with HCl (pH - 1.5) and K2CO3 or with Na2CO3​​ (pH - >7) 
4) Boiling - Boiled in distilled water and the gelatin comes in the extract (water) and then it is sterilised
5)  ​Evaporating and Coloring
6) Packaging
