how does addition of iodine indicates presence of starch in given food item

Iodine test is performed to test the presence of starch. After addition of Iodine, starch turns blue black which assures the presence of starch.
For example, if we add a few drops of iodine to a potato, it turns blue-black, this confirms the presence of starch in the potato.

Take small quantity of food item to be tested put 2to3 drop iodine solution on it observe the colour of the, food item blue black colour indicates the presence of starch in the given food item
