how is our gut lining protected from its own secretions of proteases?

All the proteases are released in an inactivated form which are known as zymogens. These zymogens are converted into an active form in a cascade of reactions. Since the zymogens are inactive, they do not act on gut lining, so our gut is protected. The proteases are also inactivated by mucus secreted by the gut.
