How is potato a good conductor of electricity?

Any substance conducts electricity because of the presence of ions or free electrons. The motion of these ions and electrons causes the flow of electricity.
The potato itself has a mixture of starches and salts and some water. The presence of salt and water releases ions, which result in the conduction of electricity. Thus, potato conducts electricity.
You will study about ions in higher grades.

 A potato will work as a conductor in an electrical circuit if the voltage is high enough. You, however, want one to work as a battery.
