Hydrogenation of unsaturated hydrocarbons gives us saturated hydrocarbons which are unhealthy. An example of which is vegetable ghee. If saturated hydrocarbons are unhealthy then why and where are they used and what is the significance of using them ?

Our body consumes these hydrocarbons as fats.

Fats are essential to good health and consumption of it every day processes the body to work efficiently. The fat in the diet helps to grow, and make the brain and nervous system to function normally and for healthy skin. But not all fats are the same or provide the same health benefits. All foods containing fats have a varying mixture of saturated, monounsaturated and polyunsaturated fats. Healthy adult should consume fats at a range of 20-35 percent of their total daily energy intake. Fats provide 9 calories per gram, but depending on if they are in concentrated oil form or solid, the per tablespoon calories change. Our body takes these and forms other lipids in the body and stores the remainder in the form of a triglyceride.

Fats can be saturated or unsaturated.

Saturated Fats

Saturated Fats are associated with triggering the liver to make more total cholesterol and more LDL cholesterol. Though they are bad, still recommend to a minimum in the diet.

Unsaturated Fats

Unsaturated fats fall into two categories.  Monounsaturated and polyunsaturated. Monounsaturated and polyunsaturated fats are considered to be more health beneficial than saturated fats or trans fats.

Monounsaturated fatty acids are associated with lowering LDL cholesterol, total cholesterol and at the same time increasing the production of the "good" cholesterol, HDL cholesterol. These fats are usually liquid at room temperature.

Polyunsaturated fatty acids trigger lower blood/ serum cholesterol as well as lower LDL production. However, they have also been shown to lower HDL production. These fats are usually liquid at room temperature.

you know anshuman we use olive oil for cooking food because they not contain saturated fatty acid we not use dalda for cooking food as they are unfit for our health

they are not very much harmful they only raise the cholesterol level in our body that's it we should eat them but not so much.
ex. vanaspati ghee , vegetable ghee like dalda

Abhinav that is OK but if saturated ones are not good then why do we convert veg oils to veg ghee(unhealthy). There should be a reason.
