Inversion of a sugar
Dear student,
The hydrolysis of cane sugar is :
t = 0 sec. a mol / L 0 0
Cane sugar + water Glucose + Fructose
t = t sec. (a - x) mol /L x mol / L x mol / L
t = ∞ sec. 0 mol / L a mol / L a mol / L
Now : x = r0 - rt and a = r0 - r∞
Then From the formula of rate constant of first order K = 2.303 / t log { a / a-x }
or K = 2.303 / t log {( r0 - r∞) / ( rt - r∞) } option (2)
