1. The answer is  EcoRI.  The recognition sequence of EcoRI enzyme is 5' – GAATTC – 3'.

2. The sequence will be:
a. 5' -CAG- 3' and  5' -AATTCTTA- 3'
b.  3' -GTCTTAA- 5' and  3' -GAAT- 5'

3. They are called as stick ends because they form hydrogen bonds with their complementary counterparts with help of DNA ligases.
