Soluble means solute is capable of dissolving in a solvent 
Insoluble means solute is incapable of dissolving in a solvent.
 

Polar and non-polar substances are soluble in polar and non-polar solvents

Polar and non-polar substances are insoluble when mixed with each other.

When a solute is soluble in a solvent it may make a homogenous mixture

When a solute is insoluble in a solvent it may make a heterogeneous mixture

Separation of soluble components in a mixture is easier difficult
Separation of insoluble components in a mixture is easier 
Sugar in water, Salt in water Oil in water, Sand in water
