Well, you will use a spring balance for this kind of activity because with beam balance we generally use the mass of the object. So if you are going to use beam balance then there will be no difference as mass is constant everywhere.
By the way, I don't think it will a profitable idea because first of all, it will require lots of money to move from equator to pole and secondly who is going to buy your products on pole as north doesn't have any human population and south pole is having only 100 to few dozens of people which are present there only for research so I think our other animal species may be a good buyer.
