We say that tartaric acid is present in unripe mangoes and unripe grapes so when these fruits become ripe where does the acid goes?

Unripe fruits like Mango, grapes, bananas, cranberries and many other contain not only tartaric but also other acids like oxalic and citric in varying proportions.
When these fruits ripen, the ripening process means conversion of these acids to corresponding esters by various enzymes in different complex pathways. This also produces a lot of sugars as byproducts.

To put it simply, all of them become some kind of ester along with various sugars as byproducts. The fruity smell of ripe fruits is due to these esters.
