There are certain steps in tea making process-
1) Growing tea plant (Camellia sinensis).
2) Withering- Leaves are withered for making pliable for crafting. This process reduces the water content of the leaves.
3) Bruising- In this process, the leaves are rolled, twisted, and crushed.
4) Oxidizing- Oxidation of leaves are done by certain enzymes and the colour of the leaves changes from green to brown.
5) Fixing- To stop the oxidation process, heat-fixed in the leaves are done for making them stable.
6) Drying- Finally, all the tea leaves are dried to remove any residual moisture such that there should not be any contamination and create a stable shelf life.
So, the process of breakdown in the tea-making process is known as Bruising.
