what does the phrase bread getting a lighter color mean?

during the days of the Nazism and World War II, Europe was becoming poorer. Therefore coarser grains were used to make bread, which although made the bread cheap but the taste was pathetic, and also gave a darker colour to bread.

However post the war, the economic conditions started going back to normal. Therefore the breads too gained their lighter colour back due to the usage of whole wheat.

The phrase isnt really a metaphor as u expect it to be.
