what type of adjective is the word 'dozen'?

Dear student
Dozen cannot be considered as an adjective. One of the reasons behind it is that dozen can take inflection s - dozens while no other adjective can do so.  Dozen is  a synonymous of twelve. And it is a collective noun.

I hope it helps you. If you still have any doubt please get back to us.

First of all , dozen is not an adjective. If you don't believe me google it. It is collective noun.Dozen refers to 12. Although a baker's dozen is considered 13, we do not use a baker's dozen.
