Why are restriction endonuclease so called?explain the role of molecular scissors in Recombinant DNA technology?

Restriction endo nuclease is an enzyme in bacteria that recognises specific base sequences in the double stranded DNA molecule and cuts the DNA at that site. They also defend bacterial viruses. Restriction endo nucleases are also called as molecular scissors, the enzyme gets activated only when it reads a particular sequence on the DNA molecule.
