why did Franz said "I never saw him so tall" (to M.Hamel)??

As M. Hamel sat in the chair looking tired and sad, little Franz thought that his teacher had never looked taller. This perception of height is not an actual increase, but symbolic of the pride M. Hamel has and feels for the language he teaches. Even though he can no longer teach French, yet he continues to respect the language and steps down from his position as a teacher with dignity.

it's a metaphor. M.Hamel looked very dignified, and though he was very emotional, he was in control of his feelings. He had made a sincere effort durign his last class, and this made him seem 'tal' i.e, great.
