Why do we dip the leaves while doing iodine test in hot water and warm alcohol?

Leaf is dipped in hot water inorder to denature enzymes so that chemical reactions does not occur and to get rid off the waterproof layer so that the leaf becomes soft. Then this leaf is soaked in boiling alcohol which helps in removing chlorophyll. Moreover warm alcohol solution helps to decolourize the leaf so that the blue colour of iodine becomes visible in iodine test.
