Why does a dry apricot placed in salt solution does not swell while they do so when kept in water ?

Apricot in the salt solution does not swell, because the outer solution is hypertonic. The water moves from the hypotonic to the hypertonic solution. And that is why it swells in the water, because water is hypotonic than the inner apricot medium.

This is because salt solution is highly concentrated and a hypertonic solution. Thus the cell wil lose water by osmosis.

When kept in salt water any water that remains in the dry apricot will move out of it and into the surroundings because the solute concentration on the outside is higher than on the inside of the apricot. This is because according to diffusion particles move from an area of high concentration to an area of low concentration so that the particles in the solute are evenly distributed in the solution. Therefore the apricot will remain shriveled. When kept in water the apricots have a higher solute concentration then it's surrounding, so water will naturally move into the apricot causing it to swell.
