Why epidermal cells in plants have small amount of cytoplasm and a large vacuole?

Dear student, 

Epidermal cells are parenchymatous cells with small amount of cytoplasm and a a large vacuole. Only a plant cell do have a large vacuole which holds large amount of water and food. For example, one of the modified cell of epidermal cell is subsidiary cell. The subsidiary cell lie in association with guard cells. These cells because of having large vacuole help in retaining of water and do not allow it to be blown away immediately by a breeze.
