why is himalayas called young fold mountains?

The Himalayan mountains began forming in the late Cretaceous-Tertiary Period (70my) and continue to increase in elevation even today. That makes them among the youngest of mountain chains on the earth. They are fold mountains because of the compressive forces involved in the collision of the two continental plates involved, the Asian and the Indian/Australian.

Compare the Himalayan mountains with the Appalachian mountains (300my). The Appalachian are "old fold mountains" having been formed hundreds of millions of years ago. And, although they reached a height taller than Mt. Everest in the Himalayan mountains, the Appalachian mountains have eroded so that they are less than 10,000 feet tall today.

The Himalayas are not very old mountains . They are of recent birth so they are called young mountains . The place where Himalayas stand today once stood the deep sea known as 'tethys' . Slowly and slowly , it got filled by the silt brought by different rivers as well as by the denudation of the adjoining landmasses over millions of years . Thus one fold over the other went on increasing . When due to some internal changes , Himalayas were formed , the different layers or folds maintained their identity . Thus the Himalayas assumed the shape of the young fold mountains and began to be called by the name i.e. , the young and fold mountains .

The Himalayas were formed in the recent past(according to geological timescale; some 2 million years ago) by the coliding of the Indian landmass with central Asia.  Note that India was earlier an is land that had budded off form the continent of Australia. This is why they are called younger than other mountains. 
Fold mountains are formed by the collision between two landmasses(technically, the tectonic plates that make up the Earth's crust), so that the point of collision rises high and forms a mountain.
