When you try to burn the leaves,the organic compounds in the leaf like cellulose, lignin etc. catch fire at a temperature higher than 100 degree Celsius. This is called the ignition point.
But the ignition point will be reached only after the all the water evaporates because as long as water is there, it will use the heat to evaporate and till it evaporates it will not allow to raise the temperature above 100 degrees Celsius. The heat used up by water for evaporation is called the latent heat of evaporation.
After the water evaporates the temperature will climb up and as soon as ignition point is reached the leaf will burn spontaneously.
