Why one can see a sharp increase in respiratory rate at the time of ripening ?

Dear student,
Ripening is the phenomena of breakdown of complex molecules like carbohydrate, lipids, proteins etc. During ripening respiratory rate increases because for the breakdown of complex molecules the metabolic rate of fruit should increase which represents respiration where complex molecules need to be broken down. This is the reason that respiratory rate at the time of ripening increases.
