Because British came India only to trade and earn more and more money from India.Cash crops are crops which are grown to directly earn money from there products . So British are interested in growing cash crops

The British was interested in the production of cash crops because they wanted as much profit as they can claim and cash crops are very expensive and these were sold at a higher price.
