What is rancidity? How can it be prevented?

Foods containing fats,oil or butter start to impart foul smelland change in taste due to oxidation is called rancidity.

METHODS TO PREVENT RANCIDITY-

  1. to keep away from sunlight
  2. to keep in refridgerator
  3. to be flushed with nitrogen gas which prevents further oxidation of food
  4. to add antioxidants like BHT and BHA

due to oxidation foods containing fats and oil are spoil and given out unpleasant smell is called rancidity.
It can be prevented by :
a) by taking food in air tight containers.

b) by putting anti oxidants.

c) by taking food in refrigerator.

d) keep away food from light.

Rancidity-

    The fats and oil containing items when are stored in open for a long time, such that they come in contact with the air, i.e, oxygen, these oils and fats react with the oxygen and get oxidised. As a result, they become rancid, and their smell and taste becomes unpleasant. This is called Rancidity.

Preventive Measures-
1) Adding antioxidants to foods containing oils and fats

2) Generally, the packets of chips we eat are flushed or filled with unreactive nitrogen to prevent rancidity

3) Food should be stored in air tight containers, to prevent it from coming in contact with oxygen.

4) Preservatives may be added to food items containing fats and oils.

5) Also, food should be stored in refrigerator rather than keeping it outside or in the sunlight.

The oxidiation of oils or fats in a foof resulting into a bad smell and bad taste is called rancidity. Methods to prevent rancidity are- 1)by adding anti-oxidents-In the food industry an no. Of special types of substances are added before packing which slow down the process of oxidiation of food. 2)vaccum packing - In a no. of cases after packing the food the container is evaculated before sealing so that no air or oxygen is available to bring about the oxidiation of food. 3)Replacing air by nitrogen - In some food stuffs the air present around them is replaced by nitrogen in the packet containing the food stuffs ex.bags of chips are flushed with nitrogen. 4)Refrigeration of food stuffs - Due to lower temp. Of refrigerator, oxidiation is slowed down.This is very common method at home,we can use it.
