Why fluid mosaic model of cell is called icebrg structure

Plasma membrane are referred to as "proteins icebergs in a sea of lipids" because the biological membranes the lipids and proteins are arranged in a mosaic fashion and do not look like a rigid structure. Even the proteins are able to move in between the lipid layers. In this type of arrangement two layers of lipids form the membrane with embedded proteins at some places not throughout.

in the fluid -mosaic model,the lipid bilayer is retained as a core of membrane. these lipids are in fluid state capable of rotating and moving laterally within the membrane. 
the structure and arrangement of membrane proteins in the fluid mosaic model are like iceberg in the sea.the protein occur as a "mosaic" of discontinuous particles that penetrate deeply into and even completely through, the lipid sheet.

according to this model, a membrane is a double layer (bilayer) of proteins and phospholipids. It is present in fluid form. The phospholipids  bilayer forms a fluid “sea”. The proteins float in this sea like iceberg.,

Therefore, the membrane is in a constant state of shifting and changing. But it retains its uniform structure. The word mosaic is used for many different kinds of proteins. These proteins are dispersed in the phospholipids bilayer.
