(a) Starch forms helical secondary structure which can hold I2 (iodine) molecules inside the helical portion. The starch iodine (I2 complex) formed gives blue colour whereas cellulose does not form helical structure and thus cannot hold I2, so does not produce blue colour.
(b) The amino acids which our body system cannot produce and are necessary to be supplied through the diet are known as Essential Amino Acids. Example : Lysine, Tryptophan.
