Fermentation is the process by which glucose is converted into either alcohol or lactic acid in the absence of oxygen. It is also known as anaerobic respiration. Fermentation occurs in some bacteria, yeasts and in the muscles during heavy exercise. 
Fermentation usually occurs in absence of oxygen. Yeast convert sugars into alcohol releasing carbon dioxide in absence of oxygen. This conversion of sugar into alcohol and CO2 is facilitated by enzymes such as invertase and zymase present in yeast.
C6H12O6  → 2C2H5OH + 2 CO2
