Hydrolysis test involves the breakdown of sucrose molecule into glucose and fructose by the acion of enzymes like invertase. This is brought about by yeast treatment or saliva treatment to sugar solution. The solution obtained is then put with Benedicts reagent. It then gives a brick red colour. Sucrose before hydrolysis does not give any colur change with Benedicts reagent.
