the question must be - how had sophie become confident that geoff had started believing her story ? 

beacuse sophie is narrating the story of meeting with danney casey to geoff .

sophie is so confident that when he started narrating the story then at first geoff thought it to be false and fantasdy ,
but after sometime , geoff asked about the structure of daney casey and when sophie narrates that to geoff , and by this showing the face expression of geoff , sophie make sure that geoff was beleiveing in her story ..
