how is a food vitamins and nutrient content measured???????

We have different types of vitamins and minerals in food. Testing and measuring of their presence differes as per the type of vitamin and minerals. I will provide for the important vitamin C and mineral chloride. Try to find others by yourself.
Vitamin C:
1-Take a starch solution in a beaker.
2-Put 2-3 drops of iodine solution, so that colour of solution changes to blue black (because of the presence of starch).
3-Now add some fruit juice in the blue black solution.
4-If vitamin C is present in the fruit juice, the blue black colour solution will turn colourless. This indicates that fruit juice contains vitamin C.

Mineral chloride:
1-Chop the food item and make its solution.
2-Add few drops of silver nitrate solution to it.
The formation of precipitate indicates presence of chloride in the food item.
Almost all the food items contain vitamin and minerals but green leafy vegetables contain them in more quantity.
