The author in this pen-portrait writes very fondly about the bakers in Goa. The baker is still known as the padre. The elders reminisce about the Portuguese and their famous loaves of bread. The makers of this bread; the mixers, moulders and those who bake the loaves are still around. The thud and jingle of the traditional baker’s bamboo, heralding his arrival in the morning at people’s homes, can still be heard in some places. During the author’s childhood days in Goa, the baker was the family’s friend, companion and guide.
The baker or bread-seller of those days had a peculiar dress known as the kabai . It was a single piece long frock reaching down to the knees. During his childhood the author saw bakers wearing a shirt and trousers which were shorter than full-length ones and longer than half pants. Even today, anyone who wears a half pant which reaches just below the knees invites the comment that he is dressed like a pader ! The eaters of the baker’s bread might have vanished, but the makers are still there ready to serve their delicious bread.
