Nitrates provide nitrogen to the plant which is very essential for their growth as nitrogen helps in production of plant proteins which thus, help the plants to grow faster and also, it helps to maintain the level of chlorophyll in leaves. If not enough nitrogen is provided to the plants then the plant growth is slowed as well as the chlorophyll level decreases affecting the whole photosynthesis cycle and thus, compromising plant's all over efficiency and growth. This can be seen in the above graph- plant growth was maximum during 2-5 days when the supply of nitrates was maximum but after that the supply of nitrates was decreased, thus, decreasing the rate of plant growth.
