Water flows through xylem in plants this happens through a potential gradient from higher to lower concentration. This gradient causes root pressure to form. At the time when evaporation is low root pressure causes excess water collection in form of droplets. This water is lost through pores to the environment. Such water loss in its liquid phase is called guttation.
