can you please explain the interstitial hydrides in simple language?

Interstices are the vacant spaces that are present in a compound. If for example, one closes the palm to form a fist, then also there will be some empty space that will be created on folding the hand. Such spaces that are empty are called voids or the interstices. The transition elements have a rough surface and dangling bonds thus they will be having variable valency. Due to this the voids can capture small molecules like hydrogen into them, there are called as the interstitial hydrogen.

Hydrides are classified into three categories, according to the nature of their bonding. Saline hydrides have an ionic bond. Covalent hydrides have a covalent bond. Interstitial hydrides have a metallic bond. These compounds are non-stoichiometric .
