The anti-oxidant is the natural compound / free radical which helps in prevention of oxidation process which helps in preserving food from oxidating damage for example if anti-oxidant is not added to oil will result in rancidity and anti-oxidants keeps the food fresh by prevention of growth of microorganisms.
In other preservatives are used to prevent the growth of bacteria, mold and viruses for example e.coli etc.., an harmful one if consumed and in general preservatives are artifically made chemicals since they are useful will result in severance by disease if used more than threshold limit.
The common examples are,
Antioxidant - Vitamin.E oil, Rosemary oil extract etc..,
Preservatives - Phenonip, Suttocide etc..,
